Bread Pudding

Ingredients:

  • bread - 4 slice
  • ground cinnamon - 1/2 teaspoon
  • ground nutmeg - 1/2 teaspoon
  • orange (just the peel) - 1/2 teaspoon
  • lemon (just the peel) - 1/2 teaspoon
  • egg yolks - 1/4 cup
  • maple syrup - 1/2 cup
  • baking soda - 1/8 teaspoon
  • raisins - 1/4 cup
  • low fat milk - 2 cup
  • vanilla extract - 1 teaspoon

Directions:

Cube bread and place in 13x9 inch pan. Combine cinnamon, nutmeg, orange and lemon peels, walnuts and raisins and sprinkle evenly over bread cubes. Beat egg yolks, maple syrup and baking soda. Scald the milk. Stir egg mixture and vanilla into milk and pur over bread mixture. Bake at 350 one hour or until golden.
