Oriental Kale and Mushroom Salad

Ingredients:

  • Shiitake mushrooms - 1/2 cup
  • Kale (or substitute green lettuce) - 2 cup
  • tofu (soft) - 2/3 cup
  • cashew (nuts) - 1/3 cup
  • Sesame Oil - 1 tablespoon
  • Soy sauce - 1 tablespoon

Directions:

You can substitute chopped green lettuce for kale. If you are using fresh shiitake mushrooms then wash them and dry them. If you are using dried shiitake mushrooms then soak them in just enough water to cover them for about a half hour until they are soft. Mix all the ingredients and serve.
