Shrimp Macaroni and Cheese

  • elbow macaroni - 2 cup
  • olive oil - 2 tablespoon
  • butter - 1 tablespoon
  • carrots - 1/4 cup
  • brown onions - 1/4 cup
  • mushrooms - 1/2 cup
  • broccoli - 1/2 cup
  • half-and-half - 1 cup
  • Swiss cheese - 3/4 cup
  • egg - 2 large
  • salt - 1 teaspoon
  • black pepper - 1 teaspoon
  • raw shrimp - 12 medium

Directions:

Cook the elbow macaroni according to directions on package. Do not overcook. Heat oven to 375 degrees. While the elbow macaroni is cooking finely chop: carrots, onions, and broccoli. Thinly slice the mushrooms. Chop the cheese into small cubes. Cut the shrimp in half, lengthwise. Use half the butter to lightly cook the shrimp in a non-stick pan for two minutes and set aside. Use half the butter to grease a 9 by 13 inch baking pan. In a large bowl, beat the eggs and then add all remaining ingredients, including the cooked elbow macaroni. Mix everything together and pour into the baking dish. Bake covered for 30 minutes. Uncover and cook for another 10 minutes. Remove from oven and cool for 10 minutes before serving.
